Preheat oven to 400 degrees F. Place 8 cupcake liners in 2 tins, coated with non-stick spray. Mix together the dry ingredients. In another bowl, mix together wet ingredients. Mix together the wet and dry ingredients. Fold in the fresh diced strawberries. Fill each liner just shy of the top. Sprinkle the tops with sanding sugar for a crunchy crust. Bake for 10 minutes, then lower heat to 350 degrees F for another 12-15 minutes until the toothpick comes out clean. Transfer muffins to a cooling rack and they are ready to serve!
