Strawberry Oat Matcha Muffins

Tasty, energizing, and healthy; what else could you ask for from a muffin? These Strawberry Oat Matcha Muffins are the perfect mix of Pekoe Sip House Matcha and the sweetness of fresh spring strawberries.These muffins would pair perfectly with our Matcha Latte to get your day started on the right sip! Now time to bake, sip, and enjoy!

Preheat oven to 400 degrees F. Place 8 cupcake liners in 2 tins, coated with non-stick spray. Mix together the dry ingredients. In another bowl, mix together wet ingredients. Mix together the wet and dry ingredients. Fold in the fresh diced strawberries. Fill each liner just shy of the top. Sprinkle the tops with sanding sugar for a crunchy crust. Bake for 10 minutes, then lower heat to 350 degrees F for another 12-15 minutes until the toothpick comes out clean. Transfer muffins to a cooling rack and they are ready to serve!

September is National Yoga Month, and for the team at Pekoe Sip House, an ideal time to celebrate the connection between tea and the practice of yoga.

Traditionally, tea is served after class to help the mind and body process the yoga practice and prepare for the transition into a busy day. During this time, we mentally and physically move from an individual experience on the mat to the social experience of sharing tea. One of the most popular types of tea for this purpose is called ‘yogi tea.’ Pekoe House Chai is very similar to yogi tea, incorporating traditional Ayurvedic spices such as cinnamon, cardamom, ginger, and cloves into an Assam black tea base. To serve as yogi tea is served, sweeten this spirited black tea blend with milk and honey.

10 Boba Tea Drinks to Satisfy Every Craving

For the uninitiated, a Boba Tea (also known as Bubble Tea or Pearl Milk Tea) is a combination of tea and milk with tapioca pearls. To make the pearls, starch of the tapioca plant is mixed with water and kneaded into a dough. Small pieces are then broken off, rolled into balls, and laid out to dry. Just before serving, the dry tapioca pearls are tossed into a pot of boiling water and become the sweet, chewy bubbles we all enjoy munching on. At Pekoe Sip House, we prepare our boba fresh every morning to be added to your favorite cold drink.

As we mentioned in our Boba Tea Blog Feature, this exotic tea drink was invented in Taiwan during the 1980s. We have been making Boba Tea at Pekoe’s three Boulder locations since our doors first opened in 2003.

Cafe Experience: Social or Solo?

One of the most curious things about a cafe experience is that the two most popular ways to have it are complete opposites. It is either a social outing or a solo indulgence.

Do you prefer a social experience, a solo moment, or both at your cafe?

I know that in the most hectic times of my life I crave a few simple minutes to myself, where I can sit quietly with my matcha latte in a Pekoe Sip House location, and just be. I can read a book, or catch up on emails, or enjoy a few minutes where I don’t have to be responsible for anyone or anything other than myself. I can truly enjoy my time, the precious and exceedingly rare moments I have alone and I emerge regenerated and refreshed.

Or, the exact opposite is what I crave. I will still go to Pekoe, but I am meeting a friend I haven’t seen in a long time, and nothing is going to feed my soul more than catching up with a good person I rarely get to see. I’ll drink my matcha latte indulgence, but this time I’m sharing a table, and maybe a snack with a good friend or two and really getting to savor the moment with good company. The sense of camaraderie surely livens my day, and connecting with other people feels really uplifting and energizing. Taking the time to slow down and really connect with other people is increasingly important in an age when we do most things online.

Both of these experiences feed us in important and meaningful ways (besides the caffeine buzz) and allow us to reconnect with others and ourselves. Even the simple task of slowing down to enjoy a beverage is calming and invigorating. Around the world coffee shops and teahouses are the preferred locales for taking “your time” for yourself or meeting with friends to catch up and enjoy a few precious free moments amidst the constant busyness of our lives.
